garlic scapes
hard neck garlic puts out flowering stem. the stem has a flowering pod that eventually produces umbel that has bulbils. the stem and the flowering pod, is garlic scape.
garlic scapes are very rich in nutrients. they are crisp, juicy, have fresh green, mild spicy, garlicky flavor.
garlic scapes can be:
good to be frozen and use for longer periods
eat raw, in salad
make into pesto/chutney
use similar to fresh garlic leaves (generally many asian cuisines make use of it)
use in stir fry
sauté
store in refrigerator for 4-6 weeks
dehydrate (for storage and eventual use)
